Organic Avocado and Egg Breakfast Bowl Recipe
Ingredients:
- 1 organic avocado
- 2 organic eggs
- 1 cup organic baby spinach
- 1/2 cup organic cherry tomatoes, halved
- 1/4 cup organic red onion, finely chopped
- 1 tablespoon organic olive oil
- Salt and pepper to taste
- Fresh organic cilantro for garnish
Instructions:
- Cut the avocado in half, remove the pit, and scoop out a bit of the flesh to create space for the eggs.
- Crack an egg into each avocado half.
- Preheat your oven to 425°F (220°C) and bake the avocado halves on a baking sheet for 12-15 minutes, or until the eggs are set to your liking.
- While the avocados are baking, heat the olive oil in a pan over medium heat. Add the red onion and sauté until translucent.
- Add the baby spinach and cherry tomatoes to the pan and cook until the spinach is wilted.
- Remove the avocados from the oven, top with the sautéed vegetables, and season with salt and pepper.
- Garnish with fresh cilantro and serve immediately.
