Organic Avocado and Egg Breakfast Bowl Recipe

Ingredients:

  • 1 organic avocado
  • 2 organic eggs
  • 1 cup organic baby spinach
  • 1/2 cup organic cherry tomatoes, halved
  • 1/4 cup organic red onion, finely chopped
  • 1 tablespoon organic olive oil
  • Salt and pepper to taste
  • Fresh organic cilantro for garnish

Instructions:

  1. Cut the avocado in half, remove the pit, and scoop out a bit of the flesh to create space for the eggs.
  2. Crack an egg into each avocado half.
  3. Preheat your oven to 425°F (220°C) and bake the avocado halves on a baking sheet for 12-15 minutes, or until the eggs are set to your liking.
  4. While the avocados are baking, heat the olive oil in a pan over medium heat. Add the red onion and sauté until translucent.
  5. Add the baby spinach and cherry tomatoes to the pan and cook until the spinach is wilted.
  6. Remove the avocados from the oven, top with the sautéed vegetables, and season with salt and pepper.
  7. Garnish with fresh cilantro and serve immediately.
